Dinner in many Indian homes is the biggest and latest meal of the day, often eaten close to bedtime. A lighter dinner that still has protein, vegetables and whole grains can feel more comfortable, especially if you eat late.

These recipes are simple, use everyday ingredients and suit weeknights.

What a healthy dinner looks like

  • Dal or another protein for fullness.

  • Vegetables, cooked or raw, for fibre and micronutrients.

  • Whole grains such as whole wheat, brown rice, dalia or millets. Choose wholegrain or higher-fibre starchy foods where you can: whole grains keep the bran and germ that refined grains lose. Even swapping half the white rice for brown rice or a millet makes a difference.

  • Moderate oil and salt.

Try to finish dinner two to three hours before sleeping if your routine allows it.

Recipe 1: Vegetable moong dal khichdi

Ingredients (serves 3)

  • Half a cup of rice (or brown rice) and half a cup of yellow moong dal

  • Two cups of chopped vegetables: carrot, peas, beans, lauki or spinach

  • Cumin, turmeric, ginger, salt and one teaspoon of ghee

Method

  1. Wash rice and dal and soak for 15 minutes.

  2. Heat ghee in a pressure cooker, add cumin, ginger and vegetables.

  3. Add rice, dal, turmeric, salt and about four cups of water.

  4. Cook for three to four whistles. Serve with curd and salad.

Recipe 2: Savoury vegetable dalia

Roast broken wheat in a teaspoon of oil until fragrant. Add onions, tomatoes, peas, carrots and beans, then water and salt. Pressure cook for two whistles. Add a squeeze of lemon and coriander. Dalia is rich in fibre and easy to digest.

Recipe 3: Millet roti with dal and sabzi

Make jowar or bajra rotis (knead the flour with warm water just before rolling). Serve with toor or moong dal and a dry vegetable such as methi aloo or bhindi. Millets add variety to the grains in your week; our millet recipes explain more.

Recipe 4: Sambar with vegetables and a small portion of rice

Cook toor dal until soft. Simmer drumstick, pumpkin, brinjal, carrot and onion in tamarind water with sambar powder, then add the dal. Temper with mustard seeds and curry leaves. Serve a large bowl of sambar with a small portion of rice and a vegetable poriyal.

Recipe 5: Palak dal with roti

Cook masoor or moong dal and add a large bunch of chopped spinach in the last five minutes. Temper with garlic and cumin. Two rotis and a salad complete the meal.

Recipe 6: One-pot dal vegetable soup

For a very light dinner, simmer moong dal with tomatoes, carrots, beans and spinach, blend partly and season with pepper and lemon. Have it with a roti or a slice of whole wheat bread.
