A breakfast with enough protein tends to keep hunger away until lunch. In Indian kitchens that does not mean protein shakes; it means using dal, besan, paneer, curd, sprouts, soya and eggs, which are already on the shelf. These fifteen recipes are quick enough for weekdays and use familiar flavours.

Each recipe serves one or two people. Adjust spices to taste, and use little oil.

Tips for protein-rich mornings

  • Soak dal at night so batters are ready to grind in the morning.

  • Keep paneer, curd, boiled eggs and sprouts in the fridge.

  • Pair a protein dish with a fruit or vegetables for fibre.

  • Use a non-stick or well-seasoned iron tawa so you need less oil.

  • Make a double batch of batter; most dal batters keep in the fridge for a day.

A note on safety

These recipes are for healthy adults and families. If you have kidney disease, are allergic to milk, eggs, soya or nuts, or have digestive problems with pulses, ask a doctor or registered dietitian before making them a daily habit. Raw sprouts can carry bacteria, so steam them lightly for children, older adults, pregnant women and anyone with low immunity. See our medical disclaimer.
